depends really on what you're after. simply put, blizzard has adjusted all crafting professions across the board so they all provide the same bonus to each stat, which pretty much leaves you at the point of asking yourself "where do i want to save/make money from?" or "what additional benefits do i want in pvp" personally i'm alchemy/herbalism as you can make a decent profit with elixir mastery and a great saving on pots and flasks for raids/day to day usage, and then from herbalism having the bonus of lifebood which is a pretty sweet heal. other professions have other benefits so really u've gotta research them and then decide urself. regardless there is no bad combination

Engineering has my vote for a PvP lock. There have been all sorts of useful gadgets there as I've been leveling. Speed boosts, stuns, snares, extra survival cooldowns.

engineering and tailoring imo, that or one of those two and herbalism... though... also alchemy has some nice arena available potions and such... hmm... tbh most of the crafts have at least some benefits~

For pvp , jcrafting / eng is best imo .

Also keep in mind that Cata should be out (relatively) "Soon", and the 'best' professions could change (though I expect eng to still be the best one for PvP).

ok, well what are some examples of how engineering is good for pvp? I was thinking of going with enchanting to get the ring enchants, but im guessing thats better for pve than pvp.
