About 8 months ago I decided to give WoW a rest and do something else. Now I want to come back with my level 80 hunter (I have been levelling a Druid now for about 2 weeks).

Problem: I need to practice my hunter, I cannot remember the correct shot priorities/macro's, anything (specially now that I have played Druid for a bit).

I don't know if there have been major changes since last September that I need to know (should I respec, maybe even train?). What is a good spot to practice? Maybe do some BG's and/or some dalies?

This is her.

She has a full pvp set also by the way (at least, it was a full set in September).

Just chain run heroics to get some gear and practice, BG's work too if you want PvP gear.
And I can't recall any major changes to shot rotations/priorities for quite a while so you're probably still good.

I am not comfortable with starting HC's straigh away, well, maybe VH. But I do not think I need gear from there. But good to know I do not have to change my shot rotations, so spec should be okay?

You're right, but you could use the new emblems that the heroics drop nowadays. Icecrown Citadel, the end-game raid instance, drops emblems of frost now. But all other raid instances and heroics drop emblems of triumph now, so I'd suggest do a lot of those to get your emblems so you can go out and buy your T9 set as well as a nice ring. Or even some off-set i-lvl 245 pieces.
Trust me, you'll love the 2-piece T9 set bonus..

Btw, you can do daily heroics through the LFD-tool now. Insta-ports to the dungeon, and cross-server groups!
If you're lucky like me, average wait time for a group will hover around 7minutes as a dps!

Happy hunting!

Edit for zpeling

I did some Dungeons with my Druid via the LFD tool (as DPS also, level 50-60 dungeons) and most of the time I got a group rather quick. The problem was, that 2/3 times people left during the dungeon and we had to wait for a new member and most of the time we did not finish the dungeon because it just took too long to find a new member every time.

I only got a satchel once (with a nice cloak).

Is that the same in level 80 instances? Or can you just finish without people leaving all the time (why they leave, I don't know, maybe they run out of time, have to do something else).

Another thing I noticed is that people just run through the dungeon, no marking, the tank just keeps pulling, no communication at all.

If there's a hi and a bye you're lucky.
Because in heroics with the gear people have communication is unnecessary and pointless.
Tanks chainpull, you MD to them on cooldown and blow your way through the instance as quickly as you can.
