Enchanting = 46 SP
JC = 48 SP
Tailoring = Lightweave Embroidery (295 Haste for 15 seconds, high proc rate, 45 sec ICD) for the equivalent of 74-98 Haste (lower end if ICD is triggered on expiration of effect, higher if it is triggered on proc--I'd wager for the latter).
Mining = 50 Stam
The best combination, DpS wise, would be Tailoring/JCing for most specs. However, that WILL be expensive. However, Tailoring/Enchanting is JUST behind that, and the two work extremely well together. You can cut your losses while leveling up Tailoring by DEing your goods and using them to level enchanting (and, if you are smart about it, you can put the enchants on Vellums and sell them).
Engineering is also one that will give you a very nice DpS buff, due to their Hyperspeed Accelerators, the slightly better cloak enchant and the boot speed ability. But, since you'll really have to take Mining with it if you don't have a high level mining toon, I stick with recommending Tailoring/Enchanting.
However, Mining/JCing is a decent alternative if you are the type that likes to farm mats for the AH. Lower DpS, but it isn't like you are gaining a MASSIVE buff from any of the professions. It' actually quite small overall (like 25 DpS small).
