Yes. You appear to be building more of a threat set than a MT set. (There's nothing wrong with that, but as you are asking us "Can I Raid?" - I assume you are building a mitigation set...) Generally speaking, you can replace most gems and sockets with Epic Stamina Gems and be good. Be sure to hit your Meta Requirements though...

A lot of people are doing this now. I have been messing around with multiple "Crit-able" specs. I am still using a Sword/Board, but I've been dropping gear for heroics. I've completed several heroics with <520 Def. The key is to lower your defense slowly (aka - Switch into DPS Gear one piece at a time as you feel more comfortable with the group) and check out the healer. At 40,000+ HP, eating a crit every once in a while really isn't dangerous. Combine that with Argent Defender... you're usually safe. I don't actually tell the healer (They'd freak out and might leave) - I just check him out. If he's rolling in 5400GS Gear... I'm fine. If the guy is covered in Blues and barely breaking 3000... Well I need to run in my raid set up. This doesn't work in Raids and I would avoid trying it in ICC 5-mans or even ToC... But for heroics that are 2 years old... It's not a problem.
I think of it as taking a DPS to a Vanilla or TBC instance. Could you die - yes. Is it likely - No.
