Crit is a big part, yes, but don't neglect spellpower either. You want a good balance of both, with some haste and hit thrown in for good measure.

There are some times when fireblast is good, but for the most part, you'll want to avoid it. Movement or when an enemy is about to die are good examples of when to hit it.

There are big differences between dummies and mobs in instances. To name a few:
1)Dummies do not die. Mobs in instances, however, have an annoying tendency to die while there's still ignite unspent on them.
2)Dummies last forever. Mobs often do not allow you to fully ramp up your DPS before dying(Living bomb + scorch applications), or if they do, they die before you can make use of it.
3)Dummies do not eat your face. Mobs in instances, however, will in fact do so if you pull aggro from the tank. The highest DPS player in the world will find their DPS severely lowered if they run with a bad or even mediocre tank.
4)Dummies do not do AoEs. Mobs, on the other hand, often do. Horrifying AoEs you must move to avoid, thus leading you to lose much DPS.
5)Dummies do not interrupt/silence you. Mobs on the other hand... *grumbles something about Strangulate that's best left unwritten*
As an exercise, have two friends come down to a dummy with you. Have one tank and watch your threat vs him. Have the other occasionally call out "AOE, MOVE!" or cast some ground targeted AoE on you so you can practice moving out of it. See what your DPS comes out to on the dummy like that.
