Don't do engineering. It's a massive garbage heap right now. I have a helicopter, and.. umm.. yeah. A helicopter. And bombs! >.>

I'm also an alchemist. It gives me all of 4 hour flasks and a trinket I almost never get a use out of anymore. And the Crazy Alchemist Potions don't even get the effect for mana restore!

If money isn't a problem, or you have an alt or friend with mining, go JC/BS. JC, BS, Inscription, and Enchanting are the best for you.

I was Mining/Skinning

I now am Mining/Enchanting. While leveling skinning was great, but now at 80 I don't find myself out killing '10 shoveltusks' for quests that often. I do farm cooking mats, but still it doesn't get me a huge stacks of skins to be useful or profitable anymore. Although enchanting did take tons and tons of gold, I think it'll pay itself off down the road (bonus is the enchant mats don't have AH fees so you can put em up there over and over).

I agree that Eng is junk.

BS gives you the ability to make some nice armor and weapons, but not as good as most raid gear. You also get to socket your own bracers and gloves.

JC gives you all kinds of nifty BoP stuff you can make for yourself, not sure how good any of it is for Holy.

Enchanting lets you enchant your own rings on top of all the other enchants you get for yourself/others.

Alchemy is not all that great for reasons another poster already gave. (And it looks like you already discovered that.)

Inscription gives you glyphs and some of the best shoulder enchants in the game.

I would do a little research into JC, BS, Enchanting, and Inscription and pick the 2 that sound best to you.

The enchant to rings are terrible.

Not only are they extremely low SP, stacking SP on a holy paladin is actually a pretty trashy way to itemize your toon.

Inscription for shoulder buff is actually 10x better. JC for dragons eye, trinkets etc. Its pretty simple.

Engineering is good up to a point and that point is when you can replace the healing helm. Similarly Blacksmithing will give you a nifty spellpower mace but that will be replaced when you get far enough into raiding.

Jewelcrafting gives you better cuts of gems and inscription gives you improved shoulder enchants. No matter how far you get into raiding, these will always be better than what you can get elsewhere. Think of them as the gifts that keep on giving.

Personally, I've got mining/engineering at the moment but that will change when I get enough money to go down the JC/Inscription route.
