For casters, or those who wear robes, you need to type /showhelm, once you use /showhood to make the hood disappear. The only problem, at least for elves, is that your ears then stick through the hat. I suggest reporting it with /bug, and hope they fix it. You can use this to show other hats/helmets, too.

Some caster robes prevent headpeices (and masks) from showing on the toon. You'll have to take off your robe
